Pumpkin Muffins

Pumpkin Muffins:

Ingredients
 
 1 spray(s) cooking spray 
 2 cup(s) all-purpose flour 
 1 Tbsp baking powder 
 1 tsp table salt 
 1 tsp baking soda 
 1/2 tsp ground cloves 
 1 tsp ground cinnamon 
 1 tsp ground nutmeg 
  2/3 cup(s) unsweetened applesauce 
  1 cup(s) canned pumpkin  (or made yourself)
 2/3 cup(s) sugar 
  1/2 cup(s) fat-free egg substitute 
  2/3 cup(s) fat-free skim milk 

Instructions
Preheat oven to 400ºF. Coat a 12-hole muffin tin with cooking spray. Line with cupcake wrappers if desired. **You might need to spray the wrappers too because my first batch stuck to the paper and no one likes that right?**


Combine flour, baking powder, salt , baking soda, cloves, cinnamon and nutmeg in a large bowl.


Combine applesauce, pumpkin, sugar, egg substitute and milk in a medium bowl; mix thoroughly with a wooden spoon.


Add applesauce mixture to flour mixture and mix until completely incorporated.


Pour batter into muffin tins so each hole is about 2/3 full. Bake for 20 to 25 minutes, or until a tester inserted in the center of a muffin comes out clean. Yields 1 muffin per serving.

-1/2 a cup of tomato sauce with seasons added________________0pts

-1/6 of a cup of mozzarella cheese_______________1pt

-1 1/2 cup of broccoli_________________0pts

Desert:

**To start I was wondering if anyone knew what the nutritional value of edible arrangements chocolate covered strawberries and apples are.  I just had to make a guess when it came to the points because I couldn't find anything anywhere.  If you find it let me know!! Second...Today I made pumpkin muffins out of the pumpkins I had on the porch for Halloween and they were amazing!! You have to try this.  It is so cheap because more than likely you already have all the ingredients!! I have posted the recipe for the muffins so if you need to know how to make the puree out of your "porch pumpkins" feel free to email me and I can send you the link that I used.**

 

Lemon-Cranberry Tuna Salad Sandwiches

Lemon-Cranberry Tuna Salad Sandwiches

Ingredients
 
 1/3 cup(s) fat-free mayonnaise 
 1/4 cup(s) reduced-fat sour cream 
 1/4 cup(s) dried cranberries, sweetened, coarsely chopped 
 1 Tbsp fresh dill, chopped 
 1/2 tsp black pepper, freshly ground 
  1/4 tsp lemon zest 
 1 tsp fresh lemon juice 
  12 oz water-packed tuna fish, drained 
 8 leaves basil 
 4 average French roll(s), sliced in half horizontally (about 2 ounces each) 
  1 small cucumber(s), sliced 
  8 leaf bibb lettuce 

Instructions
Combine first 7 ingredients in a medium bowl; stir in tuna.


Place 2 basil leaves on bottom halves of each roll; top basil leaves evenly with tuna mixture. Top each sandwich with cucumber slices, 2 lettuce leaves, and tops of rolls. Yield: 4 servings (serving size: 1 sandwich).

Day Nine (Halloween)

**Well,  I am going to have to make this day up the rest of the week.  All that candy is so tempting, and all your friends and parties, well, what can I say.  I don't even know if I should post everything or just post the amount of points I used.  Luckily I didn't really get a chance to eat this morning so there could have been more points that were used.  (I don't think replacing "good food" with beer and candy is the best idea though...)**

Breakfast:

Mid-Day Meal:

Lunch:

-Chicken Sandwich with Tomato_______________5pts

Halloween Points:

-Beer and Candy__________________44pts (maybe....this is just a guess, I stopped counting and I am the kind of person that will round up so that I feel worse about it.  That way I wont make the mistake again.)

Chicken Cordon Bleu

Chicken Cordon Bleu
Points: 4 ww points each

4 chicken breast halves
2 egg
1 tbsp water
3/4 cup seasoned breadcrumbs
12 slices thin deli ham
12 slices reduced fat Swiss cheese (I used Sargento)
salt
spray oil
toothpicks
Preheat oven to 350°.

Slice chicken breast halves into thin cutlets. I usually get 3 thin cutlets
out of one breast half. Pound them to make them thinner if you wish.
This helps when you wrap the cutlets.

Cut each slice of cheese into squares and stack on top of each other.
Place a slice of ham on top of the chicken, top with cheese and wrap
chicken around to completely cover cheese, using toothpicks to secure.
(Make sure no holes so cheese doesn't leak out) Season with a little salt.

Dip chicken into egg wash, then breadcrumbs.

Spray cookie sheet with oil and place chicken on cookie sheet.
Lightly spray chicken with oil and bake about 25 minutes, until cooked.
