Anyone local?

Is there anyone on this site that lives in NC? 

I would really like to find someone to help me be accountable for my eating and exercise habits.  I was thinking that we could have completions where we could exercise together and call each other when we were having a bad day.  Then at the end of the month the loser could buy the other dinner, or a cup of coffee, or pay for their movie, etc.

If there is someone else, who isn't in NC, but would like to work out something similar, please email me.  Maybe for prizes we could buy the winner something (like a book they wanted) and send it to the other. 

 

 

Cheesey Twice-Baked Potatoes

per serving


 

Ingredients:

2 Idaho potatoes, about 1 lb.
1/4 C. Fat-free Sour Cream
1/4 C. Crumbled Bleu Cheese
1 tsp. Chopped Fresh Parsley


Instructions:

Preheat oven to 400ºF. Pierce potatoes with fork. Bake until tender, 45-50 minutes. Remove from oven; let stand until cool enough to handle. Cut potatoes lengthwise. With spoon, scoop out potato pulp, forming 4 shells. Place pulp in bowl; add sour cream, bleu cheese and parsley. With potato masher, blend until smooth. Smooth potato mixture into shells. Place on baking sheet and bake until heated through, 15 minutes

Yield: Makes 4 servings.

Yesterday I went to eat at Zoe's Kitchen.  They claim that they only have healthy food choices so I figured that it would be okay to eat there.  When I got home and attempted to look up the food that I ate to figure the points, I was unable to find the nutritional value.  Makes me question how healthy the food is.  If anyone can help me find the information that would be great!!

Later I ended up going over my points for the day.  I am hoping that if some one can find the nutritional information for the Mediterranean tuna pita and roasted vegetables and the points are low, I can fix my food journal to say that I didn't go over.  (When I don't know points I guess higher than what they might actually be.)
