This is a wonderful recipe I made, never cooked spaghetti squash before but it turned out wonderful.
1 spaghetti squash
1 15 oz can black olives
1 small onion
4 cloves garlic
several spriggs of Basil
2 medium tomatoes (I used Roma)
3 tbsp olive oil
cracked pepper/salt to taste
1/4 c Feta Cheese (I used Romano instead)
Cut squash in half, wrap in foil, bake until cooked through (about 45 min at 375 or cook in microwave) Pull squash from sides with fork and place in bowl. Mince the onion, garlic, basil, cut up the black olives and tomatoes, sautee everything in pan with olive oil until onions are soft, add salt pepper to taste. Pour mixture over spaghetti squash, mix in feta cheese.
